Asparagus with Burrata and Toasted Almonds

Recipe by Gingham

Roasted asparagus on a platter with torn burrata, toasted almonds and pepitas, and a little lemon.

Ingredients

  • 2 bunches asparagus, woody ends snapped off
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 cup sliced almonds
  • 2 tbsp pepitas
  • 8 oz burrata
  • 1 lemon
  • Flaky salt and black pepper, to serve

Method

  1. Heat the oven to 425°F. Toss the asparagus with 1 tbsp of the oil and the salt on a sheet pan and roast until tender and browned at the tips, 10 to 12 minutes.

  2. Meanwhile, toast the almonds and pepitas in a dry skillet over medium heat, stirring, until golden, 3 to 4 minutes.

  3. Lay the asparagus on a platter. Tear the burrata into pieces over it.

  4. Grate the lemon's zest over the top, squeeze on a little juice, and drizzle with the rest of the oil.

  5. Scatter the almonds and pepitas over it and finish with flaky salt and pepper.

Notes from the source

Fresh mozzarella torn into pieces works if you can't find burrata.
