Banana Bread
Recipe by gingham
A moist, tender loaf for the bananas going brown on the counter. Mixed in one bowl with a fork.
Ingredients
- 3 very ripe bananas (about 1 1/2 cups mashed)
- 1/3 cup butter, melted
- 3/4 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1/2 tsp ground cinnamon
- 1 1/2 cups all-purpose flour
- 1/2 cup chopped walnuts, optional
Method
Heat the oven to 350°F and grease a 9 by 5 inch loaf pan.
Mash the bananas in a large bowl with a fork. Stir in the melted butter, brown sugar, egg, and vanilla.
Sprinkle the baking soda, salt, and cinnamon over the top and stir them in well.
Add the flour and stir until no dry flour is left, then fold in the walnuts if you're using them.
Scrape the batter into the pan. Bake until a skewer in the middle comes out clean, 55 to 65 minutes. If the top browns too quickly, lay a piece of foil over it for the last 20 minutes.
Cool in the pan for 10 minutes, then turn it out onto a rack and let it cool before slicing.
Notes from the source
Bananas with lots of brown spots make the sweetest loaf. Wrapped well, it keeps for 3 days on the counter.
