Freezer Breakfast Burritos

Recipe by gingham

Eggs, sausage, potatoes, and cheese rolled up and frozen, so a hot breakfast is a couple of minutes away on a busy morning.

Ingredients

  • 1 lb breakfast sausage
  • 1 lb frozen diced hash browns
  • 10 large eggs
  • 1/4 cup milk
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 1 1/2 cups shredded cheddar or Monterey Jack
  • 8 large flour tortillas (10 inch)
  • Salsa, to serve

Method

  1. Cook the sausage in a large skillet over medium-high heat, breaking it up, until browned, about 8 minutes. Move it to a bowl, leaving about 1 tbsp of fat in the pan.

  2. Add the hash browns to the pan and cook, stirring now and then, until golden, about 10 minutes. Add them to the sausage.

  3. Whisk the eggs, milk, salt, and pepper. Wipe out the skillet, melt the butter over medium-low heat, and cook the eggs, stirring gently, until just set and still a little soft.

  4. Let the fillings cool for 10 minutes, so the tortillas don't go soggy.

  5. Warm the tortillas so they bend easily. Fill each one with eggs, sausage and potatoes, and cheese, fold in the sides, and roll up tightly.

  6. Eat them now, or wrap each one in foil and freeze them in a bag for up to 3 months.

Notes from the source

From frozen, take off the foil, wrap the burrito in a damp paper towel, and microwave for 2 to 3 minutes, turning it over halfway. Or bake it in its foil at 375°F for about 35 minutes.
