Garlicky Green Beans

Recipe by gingham

Bright, crisp-tender beans tossed in golden garlic and a squeeze of lemon. Goes with nearly everything.

Ingredients

  • 1 lb green beans, trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic, thinly sliced
  • 1/2 tsp kosher salt
  • 1/4 tsp red pepper flakes, optional
  • 1 tbsp lemon juice

Method

  1. Bring a pot of salted water to a boil. Cook the green beans until bright green and crisp-tender, 3 to 4 minutes, then drain.

  2. Dry the pot, add the oil and garlic, and set it over medium heat. Cook until the garlic is just golden, 1 to 2 minutes.

  3. Add the beans, salt, and pepper flakes and toss until hot, about 2 minutes. Squeeze in the lemon juice and serve.

Notes from the source

To get ahead, cook the beans, cool them under cold water, and keep them in the fridge for a day. Finish them in the garlic just before dinner.
