Egg Fried Rice
Recipe by gingham
The best use for yesterday's rice. Ready in about 20 minutes, as a side or a simple supper on its own.
Ingredients
- 3 tbsp neutral oil, divided
- 3 large eggs, beaten
- 4 green onions, thinly sliced, whites and greens kept apart
- 2 cloves garlic, minced
- 4 cups cooked rice, cold
- 1 cup frozen peas and carrots
- 2 tbsp soy sauce
- 1 tsp toasted sesame oil
- 1/4 tsp white or black pepper
Method
Heat 1 tbsp of the oil in a large skillet or wok over medium-high heat. Add the eggs and stir until just set, then move them to a plate.
Add the rest of the oil, the green onion whites, and the garlic and stir for 30 seconds.
Add the rice and break up any clumps. Spread it out and let it sit for a minute to toast, then stir and cook for 3 to 4 minutes more.
Add the peas and carrots and cook until hot, about 2 minutes.
Stir in the soy sauce, sesame oil, pepper, and eggs, then the green onion greens.
Notes from the source
Freshly cooked rice turns mushy. If that's all you have, spread it on a sheet pan and chill it for 30 minutes first.
