Honey Roasted Carrots
Recipe by gingham
A hot oven and a little honey turn carrots sweet and caramelized at the edges. They go with almost anything.
Ingredients
- 2 lb carrots, peeled
- 2 tbsp olive oil
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp ground cumin, optional
- 1 tbsp honey
- 1 tbsp butter
- 1 tsp lemon juice
- 2 tbsp chopped parsley
Method
Heat the oven to 425°F with a sheet pan inside, so it's hot when the carrots go on.
Cut the carrots into sticks about the length of a finger, halving thick ones lengthwise so they're all about the same size.
Toss them with the oil, salt, pepper, and the cumin if using. Spread them on the hot pan in one layer, with space between.
Roast for 15 minutes, then toss and roast for 8 to 10 minutes more, until browned in spots and tender.
While they roast, warm the honey and butter together until the butter melts. Toss the carrots with it and the lemon juice right on the pan, and scatter with parsley.
Notes from the source
Give them room: crowded carrots steam instead of browning. Use two pans if you need to.
