Honey Mustard Salmon and Broccoli
Recipe by gingham
Salmon with a sweet and sharp glaze, roasted on the same pan as the broccoli. Dinner in half an hour.
Ingredients
- 1 1/2 lb broccoli, cut into florets
- 3 tbsp olive oil, divided
- 1 tsp kosher salt, divided
- 1/4 tsp black pepper
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1 clove garlic, grated
- 4 salmon fillets (about 6 oz each)
- 1 lemon, cut into wedges
Method
Heat the oven to 425°F and line a large sheet pan with parchment.
Toss the broccoli with 2 tbsp of the oil, 1/2 tsp of the salt, and the pepper on the pan. Spread it out and roast for 8 minutes.
Meanwhile, stir the mustard, honey, garlic, and the rest of the oil together.
Pat the salmon dry and season it with the rest of the salt. Push the broccoli to the sides, lay the salmon skin side down in the middle, and spread the glaze over the tops.
Roast until the salmon flakes easily with a fork, 10 to 12 minutes. Serve with the lemon wedges.
