Stovetop Mac and Cheese
Recipe by gingham
Silky, cheesy, and on the table in 25 minutes, in the same pot you boiled the pasta in.
Ingredients
- 8 oz elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1/2 tsp kosher salt, plus more for the pasta water
- 1/2 tsp dry mustard
- 1/8 tsp black pepper
- 2 cups shredded sharp cheddar
- 1/4 cup grated Parmesan
Method
Cook the macaroni in well-salted boiling water until just al dente. Drain and set aside.
In the same pot, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
Slowly whisk in the milk and bring to a gentle simmer, stirring, until thick enough to coat a spoon, 4 to 5 minutes. Stir in the salt, mustard, and pepper.
Take the pot off the heat and stir in the cheddar a handful at a time, then the Parmesan, until smooth.
Stir in the macaroni, add a splash of milk if it's too thick, and serve.
Notes from the source
Grate the cheese yourself if you can. Bagged shredded cheese can make the sauce grainy.
