Sheet Pan Chicken Fajitas
Recipe by gingham
Smoky spiced chicken and charred peppers from a hot oven, with no standing over the stove.
Ingredients
- 2 tsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1 1/2 lb chicken breasts, sliced into thin strips
- 3 bell peppers, sliced
- 1 large onion, sliced
- 3 tbsp neutral oil
- 1 lime, cut into wedges
- 8 small flour tortillas, warmed
- Sour cream, salsa, and avocado, to serve
Method
Heat the oven to 425°F with a rack in the upper third.
Mix the chili powder, cumin, paprika, garlic powder, and salt in a small bowl.
On a large sheet pan, toss the chicken, peppers, and onion with the oil and the spice mix and spread them out in one layer. Use two pans if they're crowded, so everything roasts instead of steaming.
Roast, stirring once, until the chicken is cooked through and the peppers are charred at the edges, 18 to 22 minutes.
Squeeze a lime wedge over the top and serve in warm tortillas with the toppings.
