Chicken Teriyaki Rice Bowls
Recipe by gingham
Sticky, savory homemade teriyaki with chicken and broccoli over rice. Better than takeout and ready sooner.
Ingredients
Sauce
- 1/3 cup soy sauce
- 1/4 cup water
- 3 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp grated fresh ginger
- 2 cloves garlic, grated
- 2 tsp cornstarch
Bowls
- 1 tbsp neutral oil
- 1 1/2 lb chicken thighs, boneless and skinless, cut into bite-size pieces
- 3 cups broccoli florets
- Cooked rice, to serve
- Sesame seeds and sliced green onions, to serve
Method
Whisk all the sauce ingredients together until the cornstarch dissolves.
Heat the oil in a large skillet over medium-high heat. Add the chicken in one layer and cook without moving it for 3 minutes, then stir and cook until browned and cooked through, 3 to 4 minutes more.
Add the broccoli and 2 tbsp of water, cover, and cook until the broccoli is bright green and just tender, about 3 minutes.
Stir the sauce again, pour it in, and let it bubble, stirring, until thick and glossy, 1 to 2 minutes.
Spoon over rice and top with sesame seeds and green onions.
