Fudgy Brownies

Recipe by gingham

Dense, chocolatey brownies with a crackly top. One bowl, no mixer, and very hard to stop at one.

Ingredients

  • 1/2 cup butter
  • 6 oz semisweet or bittersweet chocolate, chopped
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1/3 cup unsweetened cocoa powder
  • 2/3 cup all-purpose flour
  • 1/2 cup chocolate chips, optional

Method

  1. Heat the oven to 350°F. Line an 8 inch square pan with parchment, leaving some hanging over two sides.

  2. Melt the butter and chocolate together in a large bowl, in the microwave in 30-second bursts or over a pan of simmering water. Stir until smooth.

  3. Whisk in the sugar, then the eggs one at a time, then the vanilla and salt. Keep whisking for 1 minute, until thick and glossy.

  4. Fold in the cocoa and flour until no streaks are left, then the chocolate chips if you're using them.

  5. Spread the batter in the pan and bake until the top is set and a toothpick in the middle comes out with moist crumbs, 25 to 30 minutes.

  6. Let them cool completely in the pan, then lift them out by the parchment and cut into 16 squares.

Notes from the source

For the cleanest squares, chill the cooled brownies for 30 minutes and wipe the knife between cuts.
