Ginger Pork and Green Bean Stir-Fry
Recipe by gingham
Salty, a little sweet, and ready before the rice is. Cut everything before the pan gets hot.
Ingredients
Sauce
- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tsp cornstarch
- 2 tbsp water
Stir-fry
- 1 lb ground pork
- 2 tbsp neutral oil, divided
- 12 oz green beans, trimmed and cut in half
- 4 green onions, sliced, whites and greens kept apart
- 1 tbsp grated fresh ginger
- 3 cloves garlic, minced
- Cooked rice, to serve
Method
Stir the sauce ingredients together in a small bowl until the cornstarch dissolves.
Heat 1 tablespoon of the oil in a large skillet or wok over high heat. Add the green beans and cook, tossing now and then, until blistered in spots and just tender, 5 to 6 minutes. Tip them onto a plate.
Add the rest of the oil and the pork. Break it up with a spoon and cook until browned and no longer pink, about 5 minutes.
Add the green onion whites, ginger, and garlic and stir for 1 minute.
Return the beans, stir the sauce again, and pour it in. Toss for about a minute, until the sauce thickens and coats everything.
Serve over rice with the green onion greens on top.
Notes from the source
Ground chicken or turkey works the same way. For some heat, add a spoonful of chili crisp with the sauce.
