Slow Cooker White Chicken Chili

Recipe by Gingham

A creamy, mild chili of chicken, white beans, and green chiles that waits in the slow cooker all day.

Ingredients

  • 2 lb boneless skinless chicken breasts or thighs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (4 oz each) diced green chiles
  • 2 cans (15 oz each) cannellini or great northern beans, drained and rinsed
  • 4 cups chicken broth
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 oz cream cheese, cubed
  • 1 cup frozen corn
  • 1 lime, juiced
  • Cilantro, avocado, sour cream, and tortilla chips, to serve

Method

  1. Put the chicken, onion, garlic, green chiles, beans, broth, cumin, oregano, salt, and pepper in the slow cooker.

  2. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4, until the chicken shreds easily.

  3. Lift out the chicken and shred it with two forks. Mash about a cup of the beans against the side of the pot to thicken it.

  4. Stir in the cream cheese and corn, cover, and cook 15 minutes more, then stir until smooth.

  5. Return the chicken, stir in the lime juice, and taste for salt.

  6. Serve with cilantro, avocado, sour cream, and tortilla chips.

Notes from the source

Keeps 4 days in the fridge and freezes well without the toppings.
